Tastiest Christmas recipe of 2023 “Stuffed turkey rolls with cranberry filling and roasted vegetables“

Ingredients:

  • 4 turkey fillets (4 x 120 grams) 
  • Fresh cranberries (200 grams)
  • 1 orange, the juice and the zest (250 grams)
  • 1 onion, finely chopped (150 grams)
  • 2 cloves of garlic, finely chopped (6 grams)
  • 2 tablespoons olive oil (10 grams per spoon)
  • 1 teaspoon dried thyme (6 grams)
  • Salt and pepper to taste (pinch) 
  • 1 kg mixed vegetables (e.g. carrots, parsnips, Brussels sprouts), cut into pieces
  • 2 tablespoons (10 grams per spoon) of honey
  • Fresh thyme for garnish (a few sprigs) 

Preparation method for turkey rolls with cranberry filling and roasted vegetables:

  1. Preheat the oven to 200 degrees Celsius.
  2. Make the cranberry filling by heating the cranberries, orange peel, orange juice, onion, and garlic in a pan. 
  3. Add the dried thyme, salt, and pepper. 
  4. Cook over low heat until the cranberries burst open and the filling thickens.
  5. Flatten the turkey fillets and divide the cranberry filling over each piece. 
  6. Roll up the fillets tightly and secure with kitchen twine.
  7. Heat the olive oil in a large ovenproof pan over medium heat. 
  8. Fry the turkey rolls until golden brown on all sides.
  9. Add the mixed vegetables to the pan. Drizzle with honey and sprinkle with salt and pepper.
  10. Place the pan in the preheated oven and roast for about 25-30 minutes, or until the turkey is cooked and the vegetables are roasted.
  11. Remove the turkey rolls from the pan, cut the kitchen twine, and slice the rolls.
  12. Serve the turkey slices on a bed of roasted vegetables. Garnish with fresh thyme.
