
Banana bread is the ideal substitute for treats and sweet cravings. The taste is delicious, and the variations are endless. It is a great addition to your breakfast, makes a tasty snack, and is a healthy treat after working out. We provide the recipe here.
Ingredients:
- 4 x medium-sized overripe bananas (approximately 0.5 kg total weight)
- 3 eggs (50 grams per egg)
- 150 grams of oatmeal (gluten-free)
- 150 grams of almond flour
- 100 ml almond milk
- 3 tbsp (10 ml per tablespoon) flaxseed (finely ground)
- small apple (100 grams) peeled and cut into small pieces
- 6 small dates (6 grams each), dried and cut into small pieces
- 3 tbsp (10 ml per tablespoon) agave syrup
- 4 tsp (5 grams per teaspoon) baking powder (cream of tartar)
- pinch of salt
- optional 2 tsp (5 grams per teaspoon) speculaas spice
- 50 grams of raspberries (frozen or fresh) warmed in a bain-marie (for 2-3 slices)
Preparation method:
- Briefly puree the bananas and eggs in a tall bowl with an immersion blender.
- Add the almond milk, agave syrup, and flaxseed, and blend until smooth.
- Stir the apple pieces and dates into the banana mixture.
- Mix the dry ingredients—almond flour, oats, salt, baking powder, and speculaas spices—and stir into the banana mixture (add slightly more oats for a firmer banana bread).
- Mix everything well with a spatula and pour the batter into the cake tin.
- Bake the whole thing in the oven at 170 degrees for about 45-50 minutes until done. Check for doneness with a wooden toothpick.
- Let the banana bread cool down.
- For the topping: Heat the raspberries in a bain-marie. Slice the banana bread and place the warm, soft raspberries on top.
Vary the toppings
Instead of the warm raspberries, you can of course also top the banana bread with: organic or homemade peanut butter, nut paste, dark chocolate spread, organic apple syrup, or homemade jam.
You can store the banana bread in the refrigerator for 3-4 days. Freezing is also possible. It tastes best when eaten at room temperature.
