
A regular feature in our newsletter: the recipe of the month! This time, a delicious, light breakfast that fits into the paleo diet. It is also very suitable for after a workout, as it is high in carbohydrates.
Ingredients for 1 serving:
- 75 grams of buckwheat flour
- 1 egg (50 grams)
- 150 ml water
- 1 capful (5 ml) olive oil
- pinch (1 g) salt
- 1 small banana (80 grams)
- 50 grams of raspberries (or other (berry) fruit)
- 50 grams of strawberries
- 1 tbsp (15 grams) soy yogurt
Preparation method:
1. Mix the buckwheat flour in a bowl with a pinch of salt.
2. Break the egg over it and, while stirring, add the water and half of the olive oil.
3. Let the batter stand for half an hour.
4. Coat a small, warm frying pan or pancake pan with some olive oil and let a generous ladle of batter spread over the bottom of the pan while rotating the bottom.
5. Bake the pancake until the top is just not quite dry.
6. Flip the pancake using a spatula and fry the other side until golden brown.
7. Fill the pancake with the fruit and spoon the soy yogurt on top.
Per serving of 325.5 grams:
