Of course, you can also turn your breakfast into a party! Start the day with a cake; a delicious and healthy breakfast cheesecake! Packed with fiber, good carbohydrates, fats and proteins. If you make it on your day off on Sunday, you will have breakfast ready for two people until Thursday.

Ingredients for 8 servings

For the soil:

  • 320 g oat flour
  • 40 g coconut oil
  • 1 tbsp gingerbread spice
  • 40 g walnuts
  • 50 g dates

For the filling:

  • 1000 g low-fat quark
  • 200 g light cream cheese
  • 4 eggs
  • 2 tbsp almond flour
  • 1 lime
  • 1/2 tsp vanilla powder

Preparation method

Preheat the oven to 180 degrees.
Pit the dates and let them soak for half an hour in a shallow layer of water until they are just submerged.
Melt the coconut oil in the microwave and line the springform pan with a sheet of baking paper. You can easily wedge this between the bottom and the rim; you can cut away the excess.
Put the dates with the layer of water into a good blender or food processor and turn it on. Add the coconut oil and walnuts and blend until it becomes a fine paste. It doesn't need to be completely smooth. Finally, add the oat flour and gingerbread spices and let the food processor run until the dough becomes crumbly. The dough is ready when crumbs form that do not fall apart. If the dough is still too dry, you can add a little more water.
Place the base mixture into the springform pan and spread it well with your hands or a spoon. Then press it down firmly. Place the springform pan in the refrigerator for a short while while you proceed with the filling.

For the filling, grate the zest of a lime and then squeeze out the juice.
Put the quark, cream cheese, eggs, and lime juice in the food processor and blend for a moment. Then slowly add the almond flour. Finally, add the vanilla powder and the lime zest.
Pour the filling into the springform pan and place it in the preheated oven for 65 to 75 minutes. This varies depending on the oven. You can tell the cake is ready when the top starts to turn golden brown.
Remove the cake from the oven and let it cool for a while. Finally, it needs to stand in the refrigerator for at least 4 hours to set properly.

You can keep the cake covered in the refrigerator for about 4 days. So now you have breakfast ready for 2 people for 4 days! You can also freeze it.
