You need this (for 2 people):
- 200 g chicken breast (cut into strips)
- 1 tbsp oil (e.g. sunflower or sesame oil)
- 1 red bell pepper (in strips)
- 1 courgette (in half slices)
- 1 handful of sugar snaps or broccoli
- 100 g whole wheat noodles
- 2 tbsp soy sauce (low salt)
- 1 tsp garlic (finely chopped)
- 1 tsp ginger (grated, optional)
- Sesame seeds and fresh coriander or spring onion (for the topping)
Here's how to make it:
- Cook the whole wheat noodles according to the instructions on the packaging and drain.
- Heat the oil in a wok or large pan and fry the chicken fillets until golden brown and cooked through.
- Add garlic, ginger, and vegetables. Stir-fry for 5-7 minutes over high heat.
- Add the cooked noodles and soy sauce. Mix well and heat for another 1-2 minutes.
- Serve with a pinch of sesame seeds and some coriander or spring onion.
