
Blueberries are super healthy. The berry owes its blue color to the substance anthocyanin. This substance has a beneficial effect on the heart and blood vessels. In addition, blueberries contain antioxidants. These play an important role in the aging process. Reasons enough to incorporate these berries into a delicious recipe!
Ingredients: (4 servings)
- 175 g whole wheat flour
- ½ tsp gingerbread and speculaas spices
- 350 ml semi-skimmed milk
- 1 white free-range egg
- 2 tablespoons peanut oil
- 250 g ricotta
- 150 g fresh blueberries
- ½ lemon
Preparation method:
Whisk the flour, gingerbread spices, milk, and egg together to form a batter.
Heat 1 teaspoon of oil in a frying pan at a time and spoon ½ tablespoon of batter into the pan. Swirl the pan around so that the bottom is covered.
Cook the pancake for 2 minutes over medium heat until the top is dry and the bottom is golden brown. Flip and cook for another minute.
Repeat with the rest of the batter.
Serve the pancakes with the ricotta and blueberries. Scrub the lemon clean and grate some of the zest over them.
