
With Sinterklaas just around the corner, the temptations of December sweets are once again at the door. Pepernoten, taaitaai, chocolate, and banketletter. Of course, you can also make something different for a change, such as speculaas banana bread with almonds. Very tasty for Pakjesavond!
Ingredients for a whole cake:
- 3 bananas (100 g each)
- 50 grams of dates
- 200 grams spelt flour (sifted)
- 2 eggs (50 g each)
- 100 ml semi-skimmed milk
- 1 sachet of baking powder
- 2 teaspoons (5 g each) cinnamon
- 2 tablespoons (15 g each) honey
- 3 teaspoons (5 g each) speculaas and gingerbread spices
- 50 grams of almonds
- handful (15 g) flaked almonds
- olive oil or butter (for greasing)
Preparation:
1. Preheat the oven to 180 degrees.
2. Mash the bananas and put them in the food processor, along with the dates, eggs, milk, and honey. Mix well.
3. Mix the spelt flour, baking powder, cinnamon, and speculaas spices together in a bowl.
4. Then add the banana mixture from the food processor and stir well until it forms a smooth batter.
5. Then stir in the almonds.
6. Grease the cake tin with olive oil and fill the tin with the batter.
7. Sprinkle with flaked almonds and bake in the oven for 40 minutes.
8. Always check if the banana bread is done with a skewer.
