Perfect dish for breakfast or lunch “Huevos Rancheros”

Do you want to start the day off right with a hearty and nutritious breakfast? Then you really must try this traditional Mexican breakfast recipe. If this is a bit too heavy for you on an empty stomach, you can also enjoy it for lunch or dinner.
Because this recipe Containing a number of ingredients rich in fats and proteins, this will leave you feeling nutritious and full for a long time. This makes Huevos Rancheros a perfect breakfast dish! 

You need the ingredients for 2 people:

  • 1 avocado (180 grams)
  • 400 grams of diced tomatoes
  • 70 grams of tomato puree
  • 1 onion (80 grams)
  • 1 clove of garlic (3 grams)
  • 1 tsp (6 grams) Mexican spices
  • 2 eggs (50 grams each)
  • 200 grams of canned black beans
  • (grated) cheddar cheese (30 grams)
  • 2 wraps (40 grams each)
  • pinch of salt and pepper

Preparation method Huevos Rancheros:

  1. Cut the onion and garlic into small wedges.
  2. Pour a splash olive oil in a pan and fry the onion and garlic in it.
  3. Add the tomato paste after 2 to 3 minutes.
  4. Drain the black beans and rinse them clean. 
  5. Sauté this for 1 minute, then add the diced tomatoes and Mexican spices. 
  6. Let this simmer over low heat for about 10 minutes.
  7. Add a pinch of salt, pepper, and/or chili powder to taste. 
  8. Pour a splash of oil into a small pan and fry 2 fried eggs.
  9. Slice the avocado and divide the slices between the two wraps.
  10. Place a wrap on a plate. Spoon the sauce onto it, add a fried egg, and finally sprinkle some grated cheddar cheese over it.
