Recipe of the month February “Sports Omelet“

Start the day right with this delicious savory protein-rich breakfast. The preparation of the sports omelet is easy, and because it is a protein-rich dish, it will ensure you last for hours until lunch.

Ingredients for 1 person:

  • 30 grams of brown rice
  • 2 eggs (50 g each)
  • 1 tablespoon (10 ml) olive oil
  • ½ (50 g) finely chopped red onion
  • ½ (50 g) red bell pepper, diced
  • 1 tomato (150 g) diced
  • 2 large handfuls (100 g) fresh spinach
  • 2 sprigs (5 g) finely chopped parsley
  • a little salt and pepper (optional)

Preparation method:

  1. Cook the brown rice according to the instructions on the packaging. 
  2. Mix the eggs in a bowl and set aside. 
  3. Heat the olive oil in a frying pan. 
  4. Add the onion, bell pepper, tomato, and spinach and stir well for three minutes. 
  5. Add the egg mixture, the rice, and the parsley. 
  6. Lower the heat slightly and put a lid on the pan. After five minutes, remove the pan from the heat, tilt the pan, and fold the omelet in half. 
  7. Put the pan back on the heat, place the lid on, and let the omelet continue cooking for another minute. 
  8. Bon appetit, enjoy!
