Why this recipe?
During warm summer days, you want something light, fresh, and nutritious. This salad is rich in proteins For muscle recovery, contains complex carbohydrates for sustained energy and healthy fats for your hormone balance. Perfect as a lunch or light evening meal – and easy to take to work or the park.
What do you need? (for 2 people)
- 150 g chicken breast (grilled or fried, cut into strips)
- 100 g quinoa (uncooked)
- 1 ripe mango (diced)
- 1/2 cucumber (in half slices)
- 1 handful of arugula
- 1 spring onion (sliced into rings)
- 1 tbsp extra virgin olive oil
- 1 tbsp lime juice
- 1 tsp honey
- Salt and pepper to taste
- Optional: fresh mint or coriander
Preparation (±20 minutes)
- Cook the quinoa according to the packaging, drain and let cool.
- Bake or grill the chicken fillet on the BBQ. with some salt and pepper. Cut into strips as soon as it is cooked.
- Cut the mango, cucumber and spring onion.
- Mix the quinoa, chicken, mango, cucumber, arugula, and spring onion in a large bowl.
- Make a quick dressing with olive oil, lime juice, honey, pepper, and salt. Pour over the salad.
- Optionally garnish with fresh mint or coriander for extra freshness.
