Ingredients for 1 person:

  • Brown rice (40 grams)
  • 3 eggs (50 grams each) 
  • 1 tablespoon (10 ml) olive oil
  • ½ (40 grams) finely chopped red onion
  • ½ (50 grams) red bell pepper, diced
  • 1 tomato (70 grams) diced
  • 2 handfuls (50 grams each) of fresh spinach
  • 2 sprigs (2 grams each) finely chopped parsley
  • salt and pepper (to taste)

Preparation method:

  1. Cook the brown rice according to the instructions on the packaging. 
  2. Mix the eggs in a bowl and set aside. 
  3. Heat the olive oil in a frying pan. 
  4. Add the onion, bell pepper, tomato, and spinach and stir well for three minutes. 
  5. Add the egg mixture, the rice, and the parsley. 
  6. Turn the heat down a bit and put a lid on the pan. 
  7. After five minutes, remove the pan from the heat, tilt the pan, and fold the omelet in half. 
  8. Put the pan back on the heat, place the lid on, and let the omelet continue cooking for another minute.
