Frisse lauwwarme couscous salade

This salad is healthy, tasty, and refreshing for the warmer days.

It contains plenty of vegetables, ensuring you get enough vitamins and fiber, and it is very filling. After eating this recipe, you won't likely feel the urge to eat more. Ingredients for 4 people:

  • 300 g whole wheat couscous
  • 200 g chickpeas (canned)
  • 200 g cucumber
  • 150 g bell pepper
  • 100 g feta cheese (40+)
  •  ½ avocado (90 g)
  • 10 ml olive oil

If you make the recipe for 2 people, halve the grams indicated above.

Preparation method of this recipe:

1. Place the couscous in a (heat-resistant) bowl and add boiling water until the couscous is covered with a thin layer of water.
2. Cover the bowl with aluminum foil and let the couscous soak for 5 to 10 minutes.
3. Cut the cucumber, bell pepper, feta, and avocado into cubes.
4. Remove the foil from the bowl and toss the couscous.
5. Season the couscous with the olive oil and herbs and add the chopped vegetables.
6. Mix everything together, divide the couscous into 4 portions, and bon appétit!
