An easy and quick lunch dish to prepare that is also very filling, so you stay full all afternoon and can perform well. This tasty savory dish is on the table in less than 10 minutes, so you don't have to spend a long time in the kitchen. Since many of us are working from home these days, it's fun to try out. I'm curious to hear what you think of it!

Ingredients for the dish for 1 person

Ingredients:

– 2 eggs (50 grams each)
– a splash of milk (40 ml)
– pepper and salt
– 2 large (150 grams each) fresh tomatoes, diced
– half an onion ( +/- 25 grams), chopped
– optionally, for some extra bite: 1 clove of garlic, a chili pepper, chives
– teaspoon (5 ml) oil for frying

Preparation method:

  • Heat the oil in a frying pan, sauté the onion (and optionally the garlic clove and chili pepper).
  • Add the tomatoes and cook until they are soft.
  • Beat the eggs with the milk, and add a little pepper and salt.
  • Add this to the tomato mixture and keep stirring the eggs as you would for scrambled eggs.
  • (if you like it) sprinkle some chives over it

 

Delicious on a slice of toasted bread : )
