Boost your energy this autumn with this protein-rich meal!

Sweet potato and spinach mash with smoked chicken

Autumn has well and truly arrived: it is getting colder, the days are shorter, and the weather is becoming bleak. As a result, you might notice that you are more inclined to opt for easy or less healthy food choices, and that your motivation to stay focused on your goals is waning. Time for an extra boost! With this healthy, quick, and protein-rich autumn dish, you give yourself the fuel to improve your performance, prevent snacking, and stay fit – and it is incredibly tasty, too.

Ingredients (2 servings):

  • 400 g sweet potato
  • 150 g smoked chicken fillet
  • 150 g fresh spinach
  • 1 small onion, chopped
  • 1 tbsp olive oil
  • 1 tsp mustard
  • Salt & pepper
  • Optional: a handful of walnuts for crunch

Preparation in 25 minutes:

  1. Peel the sweet potato, cut into cubes, and cook until tender.
  2. Sauté the onion and spinach briefly in olive oil.
  3. Cut the chicken fillet into pieces.
  4. Mash the sweet potato, add mustard, and mix in the spinach and chicken.
  5. Season to taste with salt and pepper and optionally sprinkle walnuts over it.
