Ingredients (2 people)
- 2 salmon fillets (±300 g total)
- 150 g quinoa (uncooked)
- 120 g cucumber
- 150 g cherry tomatoes
- 1 avocado (±150 g)
- 80 g spinach
- 200 g chickpeas (drained)
- 50 g feta
- 1 lemon
- 10 g fresh herbs
- 10 ml olive oil
Preparation method
- Cook 150 g of quinoa according to the package instructions.
- Heat a pan with 10 ml of olive oil and fry the 2 salmon fillets until golden brown on both sides.
- Rinse 200 g of chickpeas and let them drain.
- Cut 120 g cucumber, 150 g cherry tomatoes, and the avocado into pieces.
- Divide 80 g of spinach over a large dish or two bowls.
- Add the quinoa, vegetables, and chickpeas.
- Place the warm salmon on top of the bowl.
- Crumble 50 g of feta over the dish.
- Finish with lemon juice, fresh herbs, and optionally some extra pepper.
